Rich vanilla and sweet-tart cherries combine to create a delicious and creamy Paleo ice cream. Just four basic ingredients are used to make this gluten-free and vegan dish.
Ingredients:
- 2 cups frozen cherries
- 1 can 13
- 5 oz full-fat coconut milk
- 1/4 cup pure maple syrup
- 1 tablespoon pure vanilla extract
Instructions:
In a blender or food processor, combine the frozen cherries, coconut milk, maple syrup, and vanilla extract
Scrape down the sides as necessary, and blend until the mixture is smooth and well combined
Transfer the blend into an ice cream maker and process it in accordance with the manufacturer's guidelines, typically churning it for 20 to 25 minutes
When the ice cream is firm enough to serve, move it to an airtight container and freeze it for a further two to three hours
