This soup is great for cold days because it is healthy and full of spicy flavors and hearty kale. It's easy to make this vegan soup, and it tastes great.
Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 jalapeno, diced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- 4 cups vegetable broth
- 1 can 14 oz diced tomatoes
- 1 can 14 oz white beans, drained and rinsed
- 1 bunch kale, stems removed and chopped
- Salt and pepper to taste
- Juice of 1 lime
- Fresh cilantro for garnish optional
Instructions:
In a large pot, heat olive oil over medium heat
Add onion, garlic, and jalapeno
Saut until onion is translucent, about 5 minutes
Stir in cumin, smoked paprika, and chili powder
Cook for another minute
Add vegetable broth, diced tomatoes, and white beans
Bring to a simmer and cook for 10 minutes
Add chopped kale and continue to simmer until kale is tender, about 5-7 minutes
Season with salt, pepper, and lime juice
Serve hot, garnished with fresh cilantro if desired
