Scalloped Potatoes with Ham



A warm dish made of thinly sliced potatoes, tasty ham, and smooth cheese sauce that is baked to perfection.

Ingredients:

  • 4 large potatoes, thinly sliced
  • 1 onion, thinly sliced
  • 2 cups diced ham
  • 2 cups shredded cheddar cheese
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • Salt and pepper to taste
  • 1/4 teaspoon paprika
  • Chopped parsley for garnish optional

Instructions:

Preheat oven to 375F 190C

In a saucepan, melt butter over medium heat

Stir in flour until smooth, gradually whisk in milk

Cook and stir until thickened, about 2 minutes

Remove from heat

Layer half of the potatoes, onion, ham, and cheese in a greased 9x13 inch baking dish

Pour half of the milk mixture over the layers

Repeat layers

Season with salt, pepper, and paprika

Cover and bake for 60-75 minutes or until potatoes are tender

Uncover and bake for an additional 10 minutes or until lightly browned

Let it stand for 5-10 minutes before serving

Garnish with parsley if desired

Easy Chicken Fried Rice



For hectic weeknights, this Easy Chicken Fried Rice makes a filling and speedy dinner. This tasty dish is made with basic ingredients that the whole family will enjoy.

Ingredients:

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 1/2 cup frozen peas and carrots, thawed
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Green onions for garnish optional

Instructions:

Heat vegetable oil in a large skillet or wok over medium-high heat

Add minced garlic and saut for 1-2 minutes until fragrant

Push garlic to one side of the pan and pour beaten eggs into the other side

Scramble the eggs until cooked through

Add diced chicken to the pan and stir-fry for 2-3 minutes until heated through

Stir in cooked rice and frozen peas and carrots

Cook for an additional 3-4 minutes, stirring frequently

Drizzle soy sauce over the mixture and stir to evenly distribute the sauce

Season with salt and pepper to taste

Continue to stir-fry for another 2-3 minutes until everything is well combined and heated through

Garnish with chopped green onions if desired

Serve hot and enjoy your delicious homemade chicken fried rice!
