The crispy outside and soft inside of these falafels are just right, and the herbs and spices give them a lot of flavor. Whether you eat them as a main dish or in a sandwich, they're tasty and flexible.
Ingredients:
- 1 cup dried chickpeas
- 1 small onion, roughly chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 3 cloves garlic
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/4 tsp cayenne pepper
- 1 tsp salt
- 1/2 tsp black pepper
Instructions:
Let the chickpeas soak in water overnight, then drain them
Put all the ingredients into a food processor and pulse them until they are well mixed but still a little chunky
Put the mixture in a bowl, cover it, and put it in the fridge for one to two hours
Put the dough on a baking sheet that has been lined with parchment paper
Then, roll it into balls or patties
Warm the oven up to 190C 375F

You can serve it hot with your favorite sauce or in pita pockets with salad
