Ingredients:
- 1 cup almond milk
- 2 tbsp matcha powder
- 1/4 cup chia seeds
- 1/4 cup maple syrup
- 1/2 cup coconut milk
- 1/2 cup glutinous rice flour
- 1/4 cup water
- 1 tbsp sugar
- 1/4 tsp vanilla extract
Instructions:
Put almond milk in a saucepan and heat it until it's warm but not boiling
Whisk in the matcha powder until it is completely mixed in
Add the maple syrup and chia seeds and mix well
Let it sit for 10 minutes and stir it every now and then until it gets thick
Warm up the coconut milk in a different pot
Glutinous rice flour, water, sugar, and vanilla extract should be mixed together in a bowl until a dough forms
Make little balls out of the dough and drop them into the warm coconut milk
It will take about two to three minutes of cooking until they float to the top
Mochi balls should be put on top of warm matcha chia pudding
