Shaved Brussels Sprout Salad



A refreshing and crunchy salad featuring shaved Brussels sprouts, dried cranberries, toasted almonds, and Parmesan cheese, all brought together with a zesty lemon-Dijon dressing.

Ingredients:

  • 1 pound Brussels sprouts, trimmed and thinly sliced
  • 1/2 cup dried cranberries
  • 1/2 cup toasted sliced almonds
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

In a large bowl, combine the shaved Brussels sprouts, dried cranberries, toasted sliced almonds, and grated Parmesan cheese

In a separate small bowl, whisk together the extra-virgin olive oil, fresh lemon juice, Dijon mustard, minced garlic, salt, and pepper to make the dressing

Pour the dressing over the salad ingredients and toss until well coated

Let the salad sit for about 15 minutes to allow the flavors to meld together

Serve the Shaved Brussels Sprout Salad chilled and enjoy!
