Ingredients:
- 2 lbs boneless, skinless chicken breasts, cut into chunks
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 large cucumbers, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh dill, chopped
- 1 cup Greek yogurt
- 1/2 lemon, juiced
- 1/2 cup cherry tomatoes, halved
- Cooked rice or quinoa, for serving
- Wooden skewers, soaked in water for 30 minutes
Instructions:
Olive oil, lemon juice, dried oregano, salt, and pepper should all be mixed together in a bowl
Toss the chicken chunks in the sauce to coat them
Let it sit for at least 30 minutes
You can make the cucumber salad while the chicken is marinating
Diced cucumbers, thinly sliced red onion, chopped dill, and cherry tomatoes should all be put together in a different bowl
Add salt, pepper, olive oil, and lemon juice, and toss
Put away
Get Greek yogurt, lemon juice, minced garlic, chopped dill, salt, and pepper
Mix them together to make the tzatziki sauce
Chill until you're ready to use
Warm the grill up to a medium-high level
Place chunks of chicken that have been marinated on soaked wooden skewers
Cook chicken kebabs on the grill for 6 to 8 minutes on each side, or until they are fully cooked and have a nice char
Put cooked rice or quinoa at the bottom of each bowl to put them together
Grilled chicken kebabs, cucumber salad, and tzatziki sauce should be put on top
Serve right away and enjoy!
