Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Green food coloring
- Assorted colored candy sprinkles
Instructions:
In a large bowl, cream together the softened butter and granulated sugar until light and fluffy
Beat in the eggs, one at a time, and then add the vanilla extract
In a separate bowl, whisk together the all-purpose flour, baking powder, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until well combined
Add a few drops of green food coloring to the dough, mixing until the desired color is achieved
Cover the dough with plastic wrap and refrigerate for at least 30 minutes
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
Roll the chilled dough into small balls and place them on the prepared baking sheet
Using the back of a spoon or your thumb, make an indentation in the center of each cookie
Fill each indentation with assorted colored candy sprinkles to resemble a leprechaun's pot of gold
Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely
