Chocolate-Dipped Gingerbread Spiced Marshmallows



Savor the comforting tastes of rich dark chocolate and gingerbread spice with these homemade marshmallows. Ideal for Christmastime gift-giving or snacking.

Ingredients:

  • 3/4 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 2 packets 1/2 oz unflavored gelatin
  • 1/2 cup cold water
  • 2 teaspoons gingerbread spice mix cinnamon, ginger, nutmeg, cloves
  • 1/4 cup powdered sugar, for dusting
  • 1/4 cup cocoa powder, for dusting
  • 8 oz dark chocolate, melted
  • 1 tablespoon vegetable oil

Instructions:

Place 1/4 cup water, corn syrup, and granulated sugar in a saucepan

Bring the mixture to a boil over medium heat while stirring continuously until it reaches the soft-ball stage, which is 240F

Take off the heat and place aside

Let the gelatin bloom for five minutes in a different bowl after sprinkling it over 1/2 cup of cold water

After the gelatin has bloomed, pour the hot sugar syrup over it and stir continuously until it is well combined

After adding the gingerbread spice blend, beat the mixture on high speed for ten to fifteen minutes, or until it thickens and becomes fluffy

Dust a square baking pan with cocoa powder and powdered sugar after lining it with parchment paper

Using a spatula, level the top of the marshmallow mixture once it has been poured into the prepared pan

Sprinkle additional powdered sugar and cocoa powder mixture on top

Let the marshmallows sit overnight or for at least four hours at room temperature

When the marshmallow is set, take it out of the pan and cut it into squares or other shapes you want

Use a double boiler or a microwave to melt the dark chocolate with vegetable oil

Each square of marshmallow should be dipped into the melted chocolate, letting excess drip off

After dipping the marshmallows in chocolate, place them on a tray covered with parchment paper and allow to cool until the chocolate sets

You can make these Cheesy Keto Crab Rangoons without using a lot of carbs. They are baked until they are perfectly crispy and are made with lump crabmeat, cream cheese, and a mix of cheeses. They are great for a keto-friendly snack or party dish.

Ingredients:

  • 8 oz lump crabmeat
  • 4 oz cream cheese, softened
  • 1/4 cup shredded mozzarella cheese
  • 2 tbsp grated Parmesan cheese
  • 2 green onions, thinly sliced
  • 1 clove garlic, minced
  • 1 tsp Worcestershire sauce
  • 1/2 tsp sesame oil
  • Salt and pepper to taste
  • 12 wonton wrappers for low carb, use almond flour or coconut flour wrappers

Instructions:

Warm the oven up to 190C 375F

Put crabmeat, cream cheese, mozzarella cheese, Parmesan cheese, green onions, garlic, Worcestershire sauce, sesame oil, salt, and pepper in a bowl

Mix everything together well

In the middle of each wonton wrapper, put a spoonful of the crab mixture

Wet the edges of the wrapper, then fold it in half to make a triangle and press the edges together to seal

Fill the wontons and put them on a baking sheet that has been lined with parchment paper

After the oven is hot, bake for 12 to 15 minutes, or until golden and crispy

Serve hot with the sauce of your choice

Avocado Chickpea Salad Lettuce Wraps



For a quick lunch or snack, these Avocado Chickpea Salad Lettuce Wraps are a nice choice because they are light and cool. They are healthy and tasty because they are full of avocado, chickpeas, which are high in protein, and lime juice.

Ingredients:

  • 1 ripe avocado, mashed
  • 1 can chickpeas, drained and rinsed
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 8 large lettuce leaves, washed and dried

Instructions:

In a mixing bowl, combine mashed avocado, chickpeas, red onion, cilantro, lime juice, cumin, salt, and pepper

Mix until well combined, mashing some of the chickpeas as you stir

Place a spoonful of the avocado chickpea salad onto each lettuce leaf

Fold the sides of the lettuce leaves over the filling, then roll tightly to form wraps

Roasted Strawberries + Cream Popsicles



These Roasted Strawberries + Cream Popsicles are a delightful combination of sweet roasted strawberries and creamy goodness. They make for a refreshing treat on a hot day!

Ingredients:

  • 1 lb strawberries, hulled and halved
  • 1/4 cup sugar
  • 1 cup heavy cream
  • 1/2 cup condensed milk
  • 1 teaspoon vanilla extract

Instructions:

Before you start cooking, heat the oven to 375F 190C

Strawberry should be put on a baking sheet that has parchment paper on it

Put sugar on the strawberries and toss them around to cover them all

After the oven is hot, roast the strawberries for 25 to 30 minutes, or until they are soft and juicy

Let the roasted strawberries cool down all the way

Put the roasted strawberries, heavy cream, condensed milk, and vanilla extract in a blender

Mix until it's smooth

Place the mix into popsicle molds

Place a popsicle stick in each mold

Put it in the freezer for at least six hours, or until it's solid

Take the popsicles out of the molds and enjoy once they are frozen

Leprechaun Cookies



These festive Leprechaun Cookies are a fun and delicious treat to celebrate St. Patrick's Day. They are soft, buttery cookies with a touch of green color and a pot of gold in the center made from colorful candy sprinkles.

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Green food coloring
  • Assorted colored candy sprinkles

Instructions:

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy

Beat in the eggs, one at a time, and then add the vanilla extract

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt

Gradually add the dry ingredients to the wet ingredients, mixing until well combined

Preheat your oven to 350F 175C and line a baking sheet with parchment paper

Roll the chilled dough into small balls and place them on the prepared baking sheet

Using the back of a spoon or your thumb, make an indentation in the center of each cookie

Fill each indentation with assorted colored candy sprinkles to resemble a leprechaun's pot of gold

Bake the cookies in the preheated oven for 10-12 minutes or until the edges are lightly golden

Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely

These Grilled Chicken Kebab Bowls with Cucumber Salad and Tzatziki are bursting with Mediterranean flavors. Tender marinated chicken grilled to perfection, paired with refreshing cucumber salad and creamy tzatziki, all served over a bed of rice or quinoa.

Ingredients:

  • 2 lbs boneless, skinless chicken breasts, cut into chunks
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 large cucumbers, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh dill, chopped
  • 1 cup Greek yogurt

Add salt, pepper, olive oil, and lemon juice, and toss

Put away

Get Greek yogurt, lemon juice, minced garlic, chopped dill, salt, and pepper

Mix them together to make the tzatziki sauce

Chill until you're ready to use

Warm the grill up to a medium-high level

Place chunks of chicken that have been marinated on soaked wooden skewers

Cook chicken kebabs on the grill for 6 to 8 minutes on each side, or until they are fully cooked and have a nice char

Put cooked rice or quinoa at the bottom of each bowl to put them together

Grilled chicken kebabs, cucumber salad, and tzatziki sauce should be put on top

Ingredients:

  • 1 cup almond milk
  • 2 tbsp matcha powder
  • 1/4 cup chia seeds
  • 1/4 cup maple syrup
  • 1/2 cup coconut milk
  • 1/2 cup glutinous rice flour

Instructions:
